Provenance

Where this comes from

A country name is not an origin. We publish the region we bought from, and nothing we cannot document.

01

Small lots, named regions

We buy in lots small enough to keep their identity. A lot is a single harvest from a single region, and it stays separate from the moment it arrives to the moment it is packed. That is what makes a certificate of analysis mean anything: it describes the pouch in your hand, not an average of everything in the warehouse.

02

What we will not print

Origin claims are easy to write and hard to prove. Where documentation is still being confirmed, a product page shows no origin at all rather than a vague one. An empty field is honest; a country name standing in for a farm is not.

03

Milling and packing

Whole spices are milled close to packing, because volatile oils — the reason to buy whole-milled in the first place — start leaving the moment the cell wall opens. Everything is packed in Ontario, with bilingual labelling on every unit.
